Meal Plan for the Week of May 2nd

In no particular order, here is our menu for the week! Continuing our efforts to eat less meat or rather, focus less on meat as our main protein source at dinner, only one meal (so far) is planned to have meat as a side.
  • Stuffed Ricotta Shells w/ an Arugula Salad
  • Roasted Red Pepper & Sweet Potato Soup w/ Green Onion & Cheddar Scones
  • Spanish Tortilla w/ Salad
  • Apple, Fennel & Celery Salad w/ Roasted Chicken
