Spice Muffins

I woke at 6:30am and threw in a batch of these muffins before showering. D & M really enjoyed them and D's only request was to add chocolate chips next time. If it means he'll eat them, no problem! I can't vouch for them as I didn't try them but they smelled delicious and were simple & quick to make.

Spice Muffins

1 1/4 cup flour (I used 3/4 white & 3/4 whole wheat this time)
2 tsp baking powder
2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
1 1/2 cups All-Bran Buds cereal
1 1/4 cups boiling water
1/2 cup firmly packed brown sugar
3/4 cup milk
1/4 cup vegetable oil
1 egg
1/2 cup regular or golden raisins

Stir together flour, baking powder, cinnamon, baking soda & salt and set aside.

In a large bowl, stir together cereal & boiling water. Let sit for 2 minutes until water is absorbed.

Mix sugar into softened cereal until well combined. Stir in milk & vegetable oil and add egg & raisins. Beat well. Add flour and stir until just combined. Spoon batter evenly into greased muffin cups.

Bake at 400F for about 20 minutes or until tops of muffins are light golden brown and spring back when touched. Let muffins cool 5-7 minutes before turning out onto a wire rack to cool completely.
