Orzo with Parmesan & Basil

This is definitely one of my favourite recipes for entertaining. It's quick, easy & delicious and often requested by D. We usually serve it along side steak but it's great with chicken or fish as well.

Orzo with Parmesan & Basil

3 tbsp. butter
1 1/2 cups orzo
3 cups chicken broth
1/2 cup grated parmesan cheese
6 tbsp. chopped fresh basil
Salt & pepper to taste

Melt butter in a frying pan over medium-high heat. Add orzo and saute for 2-3 minutes until slightly browned. Add broth and bring to a boil. Reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in parmesan & basil. Season with salt & pepper. Transfer to a shallow dish & serve.
